Mexican Vegetarian Bowl

This quick and each Mexican Vegetarian Bowl will excite your tastebuds. It's simple and easy to prepare. You can use your choice of meatless ground mince and add more spices of your choice. You can also make it spicy (mild or hot) to your taste. One thing for sure is you are going to enjoy it.

Ingredients 

1 Tbs Olive Oil

1 Onion finely chopped 

1 Red Bell Pepper (sliced)

12oz Meatless Ground Mince

1 oz Rugerks Taco Spice Blend 

1 Tsp Rugerks Onion Powder

1/2 Cup Tomato Salsa 

1lb Cooked Jasmine White Rice (keep warm) 

1 Can Black Beans (rince and drained)

1Avocado (peeled)

1/2 lb Cherry Tomatoes (cut in halves)

3.5 oz Tortilla Chips

1/2 cup Sour cream

Coriander and Lime wedges to serve

Cooking Steps

  1. Heat oil in a large frying pan over high heat. Add onion and bell pepper. 

  2. Cook, stirring, for 3 mins or until onion softens. Add meatless ground mince, onion pwder, and taco spice blend. 

  3. Cook for 1 min or until aromatic. 

  4. Add salsa and 1/4 cup water. Reduce heat to medium-low. Cook, stirring, for 3-5 mins or until mixture thickens.

  5. Add cooked rice to bowl and add the beans. Stir to combine.

  6. Divide the rice mixture and mince mixture evenly among serving bowls. Top with the avocado, tomato, tortilla chips and sour cream. 

  7. Sprinkle with the coriander and serve with the lime wedges.
